Learn about where we source our ingredients. Each farm is unique and hard working to bring great foods to our tables. We live in the high desert which makes everything that much more difficult, but what we get to share is mind pleasing, full circle. We support local organic farms first and continually get creative with fresh, quality, minimally refined opportunities from around the world. Our culinary team is always going 'next level' both within The Barn Kitchen and Boone Dog Pizza.

Pitchfork-T Ranch
LOCATION: sisters, oregon
BARN SOURCE FOR: beef
PURCHASE: Regenerative means giving more than you take, both to the land and environment but also the multiple species that inhabit the same lands, such as migratory mammals, birds, insects, and microbiota.

Our beef is exclusively grass-fed, grass-finished. It is never grained or confined in a feed lot. Because we keep our cattle from birth to finish, we have a large herd at different ages with different stewardship needs, which requires a lot of land and intensive management to produce the best beef while caring for the land. When you eat Pitchfork-T beef, you taste the place. It’s rich, rugged, and working for the environment, just like us.

At Cascadia Creamery, we strive to go "beyond organic". We put careful, quiet, and considered thought into every aspect of our cheese making. Our raw milk comes from a fourth generation family farm that was one of the first dairies in the state of Washington to be certified organic by Oregon Tilth.

We believe cheese should be an expression of the land. Here in the shadow of Mt. Adams, mineral-rich glacial streams, volcanic soil, and ancient lava tube caves provide the perfect conditions to craft our aged raw, certified organic cheeses.
